Lentil Salade

Our kids just love lentils, and so do I :-).
For this salad I combined them with grilled celeriac, sweet pepper and taro (I didn't know this tuber until the friendly guy from my local toko advised them to me). As always I bought a lot of fresh herbs in the same toko, thai basil, coriander, ...

When I prepare lentils I always let them germinate into fresh water (I refresh the water and rinse the lentils each fwe hours) to higher nutritive value. This also shortens the cooking time.

If I grill vegetables I alway grill to much. In a plastic box in the refrigerator they don't lose they're quality for a week. And you win a lot of time.


Lentil Salad



Ingredients for 4 persons


400 gr green lentils
2 pieces of celeriac, each 0.8 mm (diced)
2 Taro's diced
Some kummel
lemon juice
2 grilled sweet pepper into stripes
Handfull of coriander, thai basil and parsley leaves (chopped)
Fetacheese


1. Cook the lentils in chicken broth
2. Grill the sweet paprika's in the ovengrill, until blackend, cool down in a plastic bag.
3. Preheat the oven at 200 °C
4. Prepare the Taro and Celeriac with the olive oil, lemon juice (just 1-3 skeezes) kummel, p&s
5. Spread the dices out on the furnace grate, and place in the oven untill the bite is as you wish.
6. Add them to the lentils.
7. Add the stripes sweet pepper, chopped herbs and fetacheese and serve with an fresh tomato salade.
